For a chef working in the San Francisco Bay area, where diners get to choose from among the likes of Josh Skenes, David Kinch, Dominique Crenn and Daniel Patterson, making a name for yourself might appear to be a daunting task. But the friendly competition didn’t discourage Jason Fox, who by serving some of the city’s most progressive cuisine, forced his way into the discussion about where to get the best meal in the Bay Area. Fox is a master of unusual ingredient combinations. Dishes like artichokes with candied citron, black olive, hazelnut pesto and goat’s milk gel and ginger-steamed cod, parsnips, vanilla, charred rapini, mint and rau rum cause reviewers to say things like “one of the most exciting new places around” and to describe Fox’s cooking as “the classic New Californian cuisine.”
