A master at giving rustic Italian fare a sophisticated spin, Carmellini features dishes like a light-as-air fritto misto of rock shrimp and Ipswich clams or a wood-fired pork chop topped with a light purée of peperoncini. The result is "a cuisine that is far more interesting than it would be in the hands of a less talented chef."

The best way to enjoy Tom Colicchio’s restaurant is to ask the kitchen to cook for you, whereby they will shower you with a veritable smorgasboard of "sophisticated preparations of the best ingredients the daily market has to offer", that range from raw fish, terrines and pates made in house, fish paired with vegetables that taste as if they were picked that morning, and roast poultry and meats of the highest order.

Back in 2011, Phillip Foss traded in his popular Meatyballs Mobile truck for a 13-seat dining room in one of Chicago’s most deserted neighborhoods. But the surroundings aren’t the only thing Foss changed. The meatballs have been replaced by contemporary-styled dishes like peas with buttermilk, coppa and lavender, and sweetbreads served with ramps, hazelnut and licorice.
