Who would ever expect to find Modernist food in a place like Chilhowie, Virginia, a town of 1,700 people that is wedged between Kentucky, West Virginia, North Carolina and Tennessee. But that is where the husband and wife team of John Shields and Karen Urie set up shop, and for the past four years, the most serious foodies in the country regularly made the five hour drive from Washington D.C. to eat dishes like Maine lobster, cream of shells and consommé along with Karen Shields cutting edge desserts. Recently, John and Karen announced they are moving on, and all we can do is wait for them to announce the location of their next venture, which they say will be somewhere along the axis between Philadelphia and Washington D.C.
