Now that el Bulli has shuttered its doors, those looking to recreate the experience should head over to José Andrés’s Penn Quarter restaurant. Each weekday evening chef Ruben García dazzles diners with dishes like linguine made with feta cheese water and gelatin, sweet pea “caviar,” conch fritters with a liquid center and a warm foie gras soup with cold foie gras foam. Close proximity to the chefs allows you to watch them prepare this interesting and tasty food right in front of your eyes with a sleight of hand usually reserved for Las Vegas magicians.
