What always made Tom Colicchio’s eateries stand out from other New American restaurants was a kitchen that demonstrated a command of culinary technique that was a step or two beyond what the competition were capable of. Add a dose of creativity to the mix, and the experience went far beyond a restaurant that merely served farm to table cuisine. The best way to enjoy the restaurant is to ask the kitchen to cook for you, whereby they will shower you with a veritable smorgasboard of "sophisticated preparations of the best ingredients the daily market has to offer", that range from raw fish, terrines and pates made in house, fish paired with vegetables that taste as if they were picked that morning, and roast poultry and meats of the highest order.
