A jump from number 82 in our 2012 survey to 46 in 2013 demonstrates how much Jason Franey has meant to this establishment. Canlis opened in 1950, an era when fancy restaurants were regularly described as being “swanky.” In 2008 the third generation of the Canlis family asked Franey to handle the unenviable task of modernizing the restaurant’s cuisine while keeping the customers who had been eating there for the past half century happy. The result is a menu on which dishes like Muscovy duck roasted with plums, prunes and Marco Polo black tea happily coexist alongside Peter Canlis Prawns and other stalwarts that the restaurant has offered since their opening. Add to the equation “polished service,” an “exquisite wine cellar stocked with 18,000 bottles” and a “magnificent mid-century modern building offering views of Lake Union” and you have a restaurant that will please everyone from discerning diners to businessmen to your 90-year-old aunt.
