In 1984, well before it was fashionable, Greg Higgins brought local and sustainable cuisine to Portland's Heathman Hotel. He opened his own restaurant in 1994, and 17 years later, he's still holding true to his principles, serving dishes like baked Virginica oysters with nettle pesto, parmesan cheese and garlic breadcrumbs or a Tuscan "whole pig" plate that includes fennel sausage, braised belly, ribs and crepinette served with a cranberry bean stew. As is to be expected when a restaurant has been around this long, there are claims that it's "living on its reputation." But many more reviewers call it "a must for those who want to experience Pacific Northwest dining at its best." |
