Ricardo Zarate’s story is about as good as it gets. His left his native Peru to work in a variety of kitchens – most notably, Gordon Ramsay’s flagship London restaurant. Then he moved on to work as a sushi chef in LA, before opening a bare-bones Peruvian restaurant in a food court in South Central. Jonathan Gold found out about the place, and the rest is history. Now Zarate has created Picca, where one of LA’s buzziest dining rooms is full of tables covered with platters of anticuchos and plates such as braised beef heart with rocoto-walnut pesto, crispy braised duck leg in a Peruvian beer sauce and skirt steak served with a fried egg, pan-fried banana and chickpeas tacu-tacu. |
