After creating a sensation while he was running the kitchen at Maestro in the Ritz-Carlton in Tyson’s Corner, Virginia, Fabio Trabocchi decided to move north and try his hand at the New York market. The response he received there was mixed, so Trabocchi returned home to the D.C. area and opened this restaurant. Always a proponent of the Grand Italian dining experience (he began his career working for Gualtiero Marchesi), his menu is filled with luxurious ingredients, such as an appetizer of Mangalitsa proscuttio with foie gras, blood oranges, Marcona almonds and balsamico, and mains like a Beaver Creek Farm quail with cipollini agrodolce, caramelized onion cream, Benton’s bacon and dill. However, as one reviewer noted, “Trabocchi can cook with anyone, but you need deep pockets” in order to enjoy his food. |
