But if anyone out there is searching for evidence that the heartland has evolved beyond roasts and stews, look no further than this restaurant. Josh Adams spent years commuting from his native Peoria to Chicago to work at such establishments as Green Zebra and Vie. When he and his wife decided to start a family, he opened this place. Now the people in his hometown delight in Adams' "farm-to-table cuisine with a molecular edge," which includes dishes like a Green Gold Acres farm-fresh egg with house-made guanciale and coffee-smoked shiitake mushrooms or 72-hour sous vide Wagyu short ribs.
