Though his mentors Charlie Palmer and Michael Symon are important players in the New American cuisine movement, Jonathon Sawyer decided he would rather open a gastropub. The twist that Sawyer put on that style of cooking was to utilize as many local ingredients as possible. The result is dishes like crispy fried Lake Erie smelts with thousand and one island dressing, capers, lemon and parsley; Ohio black walnut soup with duck meatball, crispy fried sage and smoked prosciutto; and a grilled Ohio lamb burger with stinky cheese fondue, Champagne shallot, olive-dusted pommes frites and tangy yogurt. No wonder reviewers praise Sawyer with comments like “good use of local ingredients” and “the signature dishes of Devils on Horseback and duck fat chicken wings never disappoint.”
