I am certain there will come a time when anthropologists will document the culinary customs of the 21st century. When that happens, they will come upon a dining oddity that became popular during the century’s first decade – the food truck. Even more unusual are instances when a food truck became so popular that it turned into a permanent restaurant. El Ideas is one such place; in 2011 its chef, Phillip Foss, traded in his popular Meatyballs Mobile truck for a 13-seat dining room in one of Chicago’s most deserted neighborhoods. But the surroundings aren’t the only thing Foss changed. The meatballs have been replaced by contemporary-styled dishes like peas with buttermilk, coppa and lavender, and sweetbreads served with ramps, hazelnut and licorice. |
