Ask chefs in Chicago where they eat on their day off and there is a good chance they will say Matt Merges’ restaurant. Merges might seem an unlikely candidate to have opened a Japanese place: Before setting up Yusho, he spent 14 years as the executive chef at Charlie Trotter’s. A passion for yakitori-style dining led him down this path, and now you will find him hovering over skewers filled with things like oysters, mushrooms, sweetbreads, and every part of the chicken you can imagine, all slowly being grilled over Bincho charcoal.
