Only in Las Vegas will you find a restaurant where the management decided that decorating it with Picassos would be some type of draw. That’s right: Actual paintings worth millions of dollars. While Julian Serrano's cooking is not quite as majestic as the Cubist paintings adorning his walls, his French cuisine, featuring dishes like pan-seared U-10 dayboat scallops with potato mousseline and veal jus and sautéed medallions of fallow deer with caramelized green apples and zinfandel sauce, is artful enough to make it a serious choice for foodies in a town filled with restaurants that feature big name chefs but end up serving mediocre food. In that light, someone else offered that “Serrano is actually in the kitchen doing the cooking—a rarity in this city.”
