Operating six different bars and restaurants in the Seattle area, Ethan Stowell is one of the city’s most prolific chefs. Each location is different, and Staple & Fancy is where Stowell serves up a cuisine that combines elements of the South of France and Italy, and a few from Spain, as a tribute to the author, M.F.K. Fisher. The long list of small plates on the menu range from dishes like a spring vegetable minestrone, a soft cooked egg with Dungeness crab, chili aioli and a pimenton potato chip or a simple Bavette steak served with frittes and salsa verde. |
