Sustainable seafood's the thing. There's a raw bar with selections like diver scallops with crispy bone marrow and gremolata; starters like smoked tuna tartare with Calabrian peppers, quail egg, and black olives; and mains like sable- fish with morcilla, burnt bread and clams.
