Despite the fact that more than 30% of the state’s population is of Scandinavian descent, finding a good Scandinavian restaurant in Minnesota used to be impossible. But the Dayton brothers (sons of Governor Mark Dayton) changed that when they opened this lively place in Minneapolis’s warehouse district. Paul Berglund’s menu digs deep into his Nordic roots, and dishes like red beet tartare with fresh cow’s milk cheese, horseradish, dill and shallots, and rabbit sausage with wieninleike, white bean ragout and mustard greens will make you feel like you are cruising on the fiords. Berglund also serves one of the more unusual Sunday brunches in the country – that is, unless your typical Sunday breakfast includes items like a rolled omelet with shaved pork belly or rye spaetzle pyttipanna with pork shoulder pastrami and a poached egg. |
