After stints working in the kitchens of Aquavit and Bouley, followed by a return to his native Korea, where he opened a successful restaurant of the same name, Yim Jung-sik decided it was time to take on New York City. So he signed a lease on the space that used to house Chanterelle and started serving dishes like bibim-style Caprese salad and Five Senses Satisfaction, pork belly that he sous vides before applying various techniques to make it spicy, crispy, sour, sweet and soft.
