Even though the Pacific Northwest is turning out some of the best oysters in the country, Seattle did not have the type of funky oyster bar where lovers of the bivalve could kick back and knock back a few dozen on the half shell with a few beers – that is, until The Walrus and the Carpenter opened its doors in the city’s Ballard area. The daily menu always lists four or five different local oysters, along with more complicated food like a scallop tartare with thyme, apple, pine nuts and a Serrano tisane and cooked dishes like squid sautéed in romesco and served with anchovies and potatoes. There are craft beers and local wines, along with a list of “great cocktails,” all of which help the oysters go down more easily.
