Few restaurants in New York have as much character as this matchbox described as "noisy, cramped, terrific and unique." Gabrielle Hamilton's menu focuses on offal-oriented dishes that one doesn't normally associate with an American chef, like marrow bones with a parsley salad, grilled marinated veal heart or sweetbreads sautéed with bacon and capers. A few non-meat items win raves too, like twice-cooked chestnuts with fresh ricotta that's "one of the best vegetarian dishes in the city." Given all the different parts of the animal that Hamilton uses, it isn't surprising that she also grinds up one of the city's best burgers for lunch. There's a popular Sunday brunch featuring a dozen different types of Bloody Marys.
