One of the best things about the new style of regional cooking springing up all over the country is the modernization of traditional European cuisines. Hungarian cooking is one that we do not get to see very often, and we applaud Nicolaus Balla for doing an exemplary job of bringing it into the spotlight. Numerous reviewers raved about Balla’s lagos, a potato bread smeared with sour cream and garlic. Other dishes that will make you long for Budapest are grilled tripe with fennel and paprika and blood sausage in sauerkraut broth with Mangalica toast. At lunch, the place turns into a sandwich shop, and the menu veers away from Hungarian fare toward offerings like a goat cheese melt and Vietnamese chicken salad. |
