What do you do if you still have a chunk of space left over after opening two tapas restaurants, a patisserie and one of L.A.'s liveliest bars? Well, if you're José Andrés, you reach across the country into your bag of tricks and open a variation of your popular Minibar. Thursdays through Saturdays, Andrés serves diners a 22-course, prix-fixe, avalanche of creative fare filled with creations like modern olives, bagel and lox steam bun, hot-and-cold foie gras soup with corn foam, Nitro Gazpacho and Not Your Everyday Caprese. And the extravaganza even includes space-age cocktails like a salt-air margarita. No wonder the experience was described as, "the ultimate adventure in small plates molecular cooking" and "the most innovative and playful cuisine in L.A.”
