Some chefs burst onto the scene like a shooting star. Others spend years paying their dues before their talent is recognized. The latter describes Justin Smillie, who after spending time working at Jean George, Gramercy Tavern, Barbuto and The Standard Hotel, finally got a chance to show off his talent at this restaurant that is always overflowing with happy diners. From salumi made in-house using pork supplied by Flying Pig Farms, to spaghetti with grey mullet bottarga, to main courses like spit roasted peppered short ribs and “mouth-watering” porchetta – Smillie does such a good job with these dishes that one reviewer told us, “I could eat here every night.” |
