If one were to map the genealogy of the Cal-Ital movement, Oliveto would be at the base of the family tree. It was opened by Paul Bertolli, after he left Chez Panisse, who spent 11 years behind the restaurant's stoves before turning them over to Paul Canales. The menu, a prototype for restaurants in the genre, teems with delicious pastas, hand-crafted salumi (in fact, Bertolli left to make salumi under the Fra Mani label) and meats that are braised until they are fork-tender. Each year Oliveto holds a number of now-famous theme dinners, based on tomatoes, on truffles, or on - their most celebrated ingredient - whole hog, which draw chefs and foodies from all over the country. The fairly priced wine list emphasizes top regional wines rather than collector's items. |
