Similar to the way that chefs in San Francisco have adapted the terrific local ingredients they had access to in order to create Cal-Ital cuisine, a group of Southern chefs are doing the same thing in their region. Tandy Wilson is one of the leaders of that movement, and at her warehouse-style restaurant in Nashville’s Germantown neighborhood, she is serving dishes like North Carolina catfish in a cornmeal crust served with cauliflower, salsa verde and hot sauce. With reviewers offering comments like, “the Italian-influenced farm-to-table restaurant is where you can find the best food in Nashville’s”, it’s not surprising that Wilson’s restaurant is the most popular restaurant in the city. |
