Gerard Craft is the Superman of the St. Louis culinary scene. After creating a sensation at Niche, he opened a French brasserie and a hip cocktail bar. Not satisfied with three successful restaurants, he opened Pastaria. Though he offers small plates like a salad of shaved kale with creamy anchovy dressing, or mains such as beef braised with carrots, the main focus is on pasta, with the menu listing a dozen different preparations. Traditionalists can settle into bowls of chitarra al pomodoro and Bucatini All’ Amatriciana, to more modern fare like pistachio ravioli with mint, lemon brown butter and Grana Padano, or what Craft calls, Italian Ramen, which features spaghettini in a Parmesan broth.
