Joan Roca wrote the book on the culinary method known as sous vide, but a somewhat more classical approach has crept into his cooking since the restaurant moved to its gorgeous new headquarters. The pastries and wine cellar, handled by brothers Josep and Jordi, are so good that on their own they are a reason to visit the restaurant.
