By combing the forests, fields, lakes and seas of his native Denmark for ingredients long forgotten by the country's population, and then applying techniques that were being practiced at the world's most progressive restaurants, René Redzepi created the culinary narrative that came to be known as the New Nordic cuisine. It created such a sensation that it is now being copied in restaurants all over the globe.
