Former Charlie Trotter's executive chef Matthias Merges has created this "yakitori-esque dining experience" in Chicago's Logan Square neighborhood. Those in a fowl mood can enjoy preparations like crispy chicken skin with Japanese mustard, garlic and togarashi or steamed buns with BBQ Ume Boshi duck drumsticks . If you're feeling fishy you might opt for some octopus with enoki mushrooms, haricot vert and egg yolk vinaigrette, while meat eaters might zero in on beef tongue with horseradish, Yukon gold potatoes and ginger. Sunday is Noodle Day, and Merges has five different types of ramen on offer.
