Before Ashley Christenson opened Poole’s, people who lived in Raleigh had to drive to Chapel Hill and Durham to get a good meal. But Christenson reversed the tide and was so successful she now operates a five-restaurant mini-empire in the city. How did she do it? By converting a pie shop that dated from 1945 into a contemporary restaurant with a retro feel, and serving daily specials like North Carolina black drum with charred squash and onion salad and green tomato remoulade, and summer pork cassoulet with “pit peas,” pickled corn chowchow and cornbread breadcrumbs.
