When we first discovered Ricardo Zarate's cooking, we suspected that a modern Peruvian restaurant run by a Gordon Ramsay-trained chef wouldn't languish in a food court in South Central L.A. for very long. Well, we were right: So many people heard about Zarate's unique take on his native cuisine that they made a special trip in order to try dishes like quinoa and mushrooms made in the style of risotto. As was to be expected, fame attracted backers, and you can now find Ricardo serving deconstructed arroz con pollo from a location in downtown L.A's trendiest neighborhood.
