Relying on his wood-burning oven, Kirschner dishes out bone marrow with onion marmalade and sourdough, brussels sprouts with pancetta, chestnuts and mustard, and a half chicken with heirloom tomato bread salad. You can also avail yourself of one of the T & R Suppers, like wood-fired goat or paella, which must be ordered seven days in advance.
