Mike Emerson (Pappy) serves ribs so succulent and juicy that, in order to keep up with the demand, he keeps two mobile smokers parked outside his restaurant, cranking out hundreds of slabs a day. Sporting a beard that would make any hillbilly proud, he's usually schmoozing with the people waiting on the long line to be seated. Diners are advised to "get there early before they run out of food," especially on Sundays, when hordes literally descend on the place.
